Easy as 1-2-3

Ingredients

1 part sugar
2 parts butter
3 parts plain wheat flour

Method

Melt the butter in the microwave, then slowly mix the flour in with a fork. The batter should start off as a slurry but then gradually stiffen. At the end, the pastry should still bind but crack or crumble easily when folded. If it is too liquid then add more flour; if too crumbly then add more butter. Mix the sugar in by hand. Roll the pastry out to half-an-inch thickness and cut into shapes.
Put biscuits into fridge. Warm the oven to 190°C. After 10 minutes, take the biscuits out of the fridge and place in the oven for 10 minutes. Check every two minutes after that: biscuits are ready when they are golden brown. Leave to cool. If you don't wait for the biscuits to cool first then they will be a little chewy in the middle, which is also fine!
